Plan Your Meat-Free Meal Mondays: a Month of Simple Recipes

Full disclosure: I’m vegetarian, but that hasn’t always been the case. My family enjoys eating meat, so we cook lean cuts for them, however I ensure every week we all enjoy at least 1-2 meat-free meals together.

To kick start your meal planning, I’ve created a list of four of our family favourite easy vegetarian dishes, so you can get planning and start enjoy the benefits of including more plants in your diet.

  1. Mushroom Stroganoff

  2. Baked Pumpkin Risotto


    Another Autumn/Winter warmer recipe made with risotto rice that will truly satisfy hungry tummies.
  3. Vegetarian Quiche


    Tastes delicious hot or cold, making it the perfect meal to make extra and pack for cold lunches the next day. Full of veggies and eggs that are high in protein and nutrients, this simple baked meal is a favourite in our house.
  4. Mexican Burrito Bake


    A different take on the classic favourite burrito. Easy to cook, in one oven tray, and comes out crispy and easy to serve. Just leave the seeds off if your kids are as fussy as mine.
